Where and How is Dragon Well Tea grown?
Dragon Well Tea, also known as Longjing tea, is a green tea made from pan fried young tender buds of the Camellia Sinensis plant. Known as one of China's most prestigious speciality teas, with many health benefits and is renowned for its high quality.
Despite its documented popularity, this tea, with such an incredible history, has been growing for thousands of years in Zhejiang Province, China with the best often growing around the West Lake region on the outskirts of Hangzhou. This is a protected zone for the growing area, and because of this, you may occasionally see Long Jing referred to as Xihu Long Jing.
There are four original Long Jing tea villages within the West Lake, th two most revered being Xifeng (aka Chi Feng or Lion Peak) and Mejiawu.
What makes this region so unique is that it's mountainous and has a relatively mild and temperate climate that sees frequent rainfall with moderate sunlight exposure.
This is an ideal terrior for growing exceptionally high-quality and flavourful teas. It also allows the tea leaves to preserve more thiamine, a compound that helps give Dragon Well Tea its characteristic mellow, sweet flavour profile.
Like many Chinese Teas, Dragon Well is hand-harvested in the Spring where only the youngest, tender buds are selected. As this is a Green Tea, the leaves undergo no oxidisation, and they are instead quickly pan-fried to preserve the tea's character and dry the leaves. This process yields an emerald-green, fragrant tea that has a distinctive flat shape.
When the leaves are brewed at 80C, the infusion achieves a distinctive yellow-green hue with a light, fresh flavour. It is often thought that the lighter the infusion, the better the quality of the tea.

Types of Dragon's Well Tea
There are three main types of Dragon's Well tea and two additional varieties that are sometimes still classified as Longjing. The first three teas are known as Xihu Longjing teas - those that are grown in the West Lake area. The latter two are cultivated in the same province, but a different region - Anji rather than Xihu - so traditional tea classifiers don't always consider them true Dragon's Well teas even though they share many of the same flavor characteristics.
Meijiawu Dragon's Well Tea
Nestled in the mountains of Xihu, more than 500 farmers cultivate an exquisite form of Dragon's Well tea known as Mejiawu. What sets this Longjing tea apart from others is its rich jade green hue. The tea steeps a bright pale green liquor and offers nutty notes with a mildly floral aftertaste.
Shi Feng Longjing Tea
This type of Dragon's Well tea is named after the mountain on which its tea leaves are harvested. Shi Feng - or Lion Peak - is one of five large mountains in this region of China. Its mild and foggy climate creates the perfect conditions for developing exquisite and expensive teas. This type of Longjing tea is the type historically enjoyed by emperors and is considered the highest quality Dragon's Well tea. The tea brews into a light yellow hue and has a crisp flavor.
Tiger Spring Dragon's Well Tea
Tiger Spring is another famous green tea from the West Lake region. This loose leaf tea is cultivated near the clear, refreshing Tiger spring. It is an expensive Dragon's Well tea that can be infused numerous times without a decrease in flavor quality. It tends to be more mellow than Shi Feng with higher vegetal notes.
Bai Longjing
Bai Longjing is not a true Dragon's Well tea as it is produced in Anji. In addition, this type of tea is actually made from a special type of white tea plant, although it is processed and sold as a green tea. The tea boasts a full body with grassy notes and is more affordable compared to the true Dragon's Well teas.
Qiantang Longjing
This type of Dragon's Well tea is cultivated outside of the West Lake region and is largely produced by the popular Chinese brand Shi, or Lion. It is one of the most popular Longjing teas as it is more affordable for the masses. This type of green tea boasts nutty aromas and an aftertaste that is similar to sweet, juicy grapes. The tea leaves are an emerald green hue and brew into a rich green color when infused in hot water.

For the best flavor, it's better to use loose leaf tea rather than tea bags. That's because loose tea tends to be a higher grade than tea bags, which usually only contain the dust and fannings of tea leaves. Also, make sure to use filtered water or spring water instead of tap water for the most authentic flavor.
Like most green teas, Dragon's Well tea should be brewed at lower temperatures than black tea or oolong tea, which can tolerate more heat. This type of green tea should be brewed with a water temperature between 170 and 180 degrees Fahrenheit (76 to 82 degrees Celsius) For best results, use a temperature-controlled tea kettle to reach the proper temperature. If you don't have one, you can also bring water to a simmering boil and then let it cool for 2 minutes before pouring into your teapot for steeping.
How to Brew Tea:
Start by rinsing a gaiwan or teacup with hot water. Swirl the hot water around to warm the cup.
Take 1 teaspoon of Dragon's Well loose tea and place them in a tea strainer and set in the gaiwan.
Fill the teacup with water around 175 degrees Fahrenheit.
Let the tea leaves steep for 2 to 3 minutes.
Remove the tea leaves and enjoy your cup of tea!
Dragon's Well tea leaves can be infused 3 to 5 times before losing flavor. Set the leaves aside to brew multiple infusions, just make sure to increase the steeping time with each infusion by about 30 seconds.
Proper Storage of Dragon Well Green Tea
Proper storage of your Dragon Well green tea is of the utmost importance in keeping it at its freshest and most flavorful. When you first purchase a high grade Dragon Well Longjing green tea, the first taste of it is delicate and exquisite. With proper storage techniques, you can make your tea taste like the first time, every time. Without properly storing your Dragon Well green tea, the tea will degrade quickly and lose it's quality even over a period of days.
Using a suitable canister is a major factor in proper tea storage. Ideally the canister should be opaque, not be able to absorb odors, and have an air-tight lid. When you add new tea to your canister for the first time, shake some of the new tea around inside of it then to store the package or loose tea inside the canister. Be sure that your canister or container has a very tight lid so that air cannot permeate the canister.
It is also of extreme importance that your tea be stored far away from your kitchen or other moist or humid places, such as near dryer vents, dishwasher vents or other areas your tea could absorb any moisture. As mentioned above, your canister for storing your tea should be dark so that sunlight can not degrade the tea, but your canister should also be moisture-proof and placed in an area away from any dampness which can cause oxidization, mold or mildew in your tea. If your tea does take on any moisture, discard it immediately. Maybe the fridge is also a better choice.

Grades of Dragon Well Tea
All our three grades are classified as genuine Dragon Well according to the EU PDO registered for this tea in 2011. Within China itself there are three classifications, separating Dragon Well from the West Lake area, from tea produced outside this traditional and small production area (but still within Zhejiang province). Tea grown outside Zhejiang province cannot be sold in EU as Longjing, nor within China as Longjing. You can grow the same cultivars and process the tea leaves in identical ways regardless of location but they will not taste the same, which is why there are tight controls in protecting this beautiful, ancient tea.
Why 3 Grades? What Makes Them Different?
We provide three different grades to make delicious Dragon Well accessible to all who want to enjoy it and the core differences are picking date, cultivar, processing and origin (yes, even if they are from the same province). The only other variable is how much temperature is used in the firing, which gives varying degrees of roasted flavour – a balance between green, vegetal and roasted, nutty flavours. We believe too much roasting kills the vibrancy of the leaf, so prefer lighter roasting profiles (and tend to request this from our producers).

The leaves are processed at the local cooperative, where the cost of the machines is shared by a village, all of whom own small gardens. Our entry grade to Dragon Well, this uplifting green tea presents tasty hazel-sweet notes as a result of light pan firing.

Young, plump buds are picked early - pre-Qingming - for this tea. This year's crop comes from Mr Du's 'Tianmu' organic garden in Hangzhou, with heavy forest cover and a beautifully clean environment also near to Thousand Island Lake – a truly scenic destination. The traditional Jiukeng cultivar from which this crop is made has its authentic home here in the ancient cultivation and thousands of years' history of China's most famous green tea.

From the beautiful origin of West Lake where the tea gardens are nestled in the rolling hills, this grade is the best expression of traditional Dragon Well character. Picked between 30th and 31st March 2016, our pre-rain Dragon Well West Lake is sourced from Li Tongwu garden; a prosperous village bustling with traditional arts and crafts displays, and processed in Wai Tong Wu village. The aromas are subtle and the most telling quality is the thick, syrupy texture: if you know your Dragon Well, you can tell it's from West Lake and grown from the original cultivar.
