History of China Black Tea
China is the birthplace of black tea, which in China is called, perhaps more appropriately, hong cha – red tea – after its the red colored tea it usually produces. It's history in China can be traced back to the late Ming Dynasty, around the year 1590, when the first black tea – Lapsang Souchong – was produced in the area around Wuyi Mountain in Fujian province. This high mountainous area was called Lapsang and the small leaf tea trees Souchong – hence the name. Today China's best and most well known black teas include Fujian Lapsang Souchong, Fujian Minhong,Guangdong Yingteh and Sichuan Mabian Gongfu black teas.
Keemun black tea is arguably China's most famous black tea, and was first made in 1875 in Qimen county by Hu Yuanlong who journeyed to Fujian to learn tea making. When he returned to Qimen he began locally producing his own tea, that soon became known as Keemun black tea, and went on to become one of the most sort after black teas in China.
Black tea with milk and sugar
Though almost always drunk "black" in China many westerners prefer to drink black tea mixed with milk and sugar, which usually enhances both the fragrance and taste of good black teas. A small amount of sugar can actually enhance the sweet, floral taste of most black teas. Keemun is especially notable, with it taking on a beautiful almost pink color when mixed with a small amount of milk. Most Chinese black teas, not only Keemun but also Yunnan, Yingteh and Tanyang gongfu are great to drink with milk or sugar.
The introduction of black tea to Europe
The history of black tea in Europe began in the 17th century when European explorers first reached China. The first documented record of tea in Europe is from 1610, when Dutch merchants first brought back Chinese black tea from China, and then sold it widely all around Europe. In England it was at first considered a "mysterious oriental drink" and sold at very high prices that only the aristocracy could afford. From this beginning it was became a drink that marked the well to do, and so became popular as a drink to indicate your wealth and position in society.

Generally speaking, China Black Tea is processed in two ways in China: CTC (crush, tear, and curl) and orthodox. Each has its own style and both go through the following four processes:
Withering
The newly-picked tea leaves are first withered by blowing air onto them until their veins are transparent.
Rolling
The withered leaves are rolled into strips either by a rolling machine or by hand. The rolling machine process results in a mixture of whole leaves, broken leaves, and fine particles. The hand process is used for producing high-quality tea, which is highly valued by tea tasters and blenders.
Fermenting
As the most important step in making black tea, fermentation refers to the process where rolled leaves are oxidized under a suitable temperature and humidity for five to six hours, after which the leaf veins turn reddish-brown owing to the oxidizing action.
Baking
The newly-fermented leaves are supposed to be baked at a temperature of about 80°C (176°F) for six hours or so, and can be packed after they cool down.
Classification of Chinese Black Tea
Keemun Black Tea
Black tea is planted in different provinces of China and has many varieties but there are three main types: Xiao Zhong black tea, Gongfu black tea, and Broken black tea.
Xiao Zhong Black Tea
As the oldest black tea of China, Xiao Zhong black tea is further divided into Zheng Shan Xiao Zhong and Waishan Xiao Zhong, of which the former is planted in Tong Mu Guan, Wuyi Mountain, Fujian Province, and it's divided into an oriental flavor and a Western flavor. Waishan Xiao Zhong is planted in the counties of Zhenghe, Tanyang, Gutian, and Shan, in Fujian Province.
Gongfu Black Tea
Gongfu black tea is native to China. Gongfu has two meanings, one of which refers to the fact that more effort is supposed to be made in the infusion of black tea, and the other refers to the fact that you should take your time to fully enjoy the tea.
Gongfu black tea has many varieties, each of which has its own unique flavor and is often named after the region where it's produced.
Broken Black Tea
Broken black tea is widely planted in the provinces of Yunnan, Guangdong, Hainan, and Guangxi, and it's mainly grown for export. Broken black tea is classified into various types according to its shape, including tablet tea, fanning tea, and dust tea.

Keemun Congou Black Tea of Taste
Keemun Congou has a classic ‘raisin-y’ tea flavor, that is often referred to as ‘winey’ . This tea has a soft fruity aroma that is distinctive and very intoxicating. What makes black tea unique?
Black tea is the most popular type of tea worldwide. It's one of four types of tea made using the leaves of the camellia sinensis plant - the others are green, oolong and white teas. The difference between the types of teas is in how they are processed.
Unlike other teas, black tea leaves undergo an extensive oxidation process, exposing the cells inside the leaves to oxygen. Experts believe this oxidation may give black tea some different benefits than green tea (which receives no oxidation). Both oolong and white teas undergo partial oxidation.
Benefits of drinking black tea
The benefits associated with most teas come from polyphenols - antioxidants that offer protection from several chronic diseases. Reduces the risk of stroke
Stroke - when there's a blockage in the blood vessels carrying blood to the brain - is the second leading cause of death globally. Drinking black tea may be one way to reduce your risk of stroke. Studies show that drinking at least two cups of tea daily may reduce the risk of stroke by 16% compared to people who do not drink tea.
Improves focus
Unlike some other types of tea, black tea has caffeine - about half the amount in coffee. It also contains an amino acid called L-theanine. The combination helps with alertness and focus. How much black tea is too much?
Unlike other teas, black tea contains caffeine - about 50 to 90 milligrams per cup. Too much caffeine can leave you anxious, restless and unable to sleep. To avoid over-caffeinating yourself, keep your daily caffeine intake under 400 milligrams. But don't assume black tea is your only source of caffeine. Your total intake needs to include caffeine found in medications and everything you consume.
