What is pan-fired green tea?
Pan-fired green tea is green tea that is fixed and dried in a pan. After rolling, the finished tea comes in different shapes such as long strips, round beads, flat shapes, and spiral shapes and is also called "long pan-fired green tea," "round pan-fired green tea," "flat pan-fired green tea," etc. Among pan-fried green teas, flat-shaped teas include Longjing and Zhuyeqing; needle-shaped teas include Xinyang Maojian, Anhua Songzhen, and Nanjing Yuhua Tea; curled-shaped teas include Biluochun and Duyun Maojian; round teas include Yongxi Huoqing; bud-shaped teas include Huangshan Maofeng, Jinzhai Cuimei, and Jinshan Cuiya; and sheet-shaped teas include Liuan Guapian.
Some special pan-fried green teas require a final drying process to maintain the integrity of the leaf shape.
